For those with an RCR40 MKI with the +2 Fenders and extended rear a-arms, what are the overall width dimensions at the tires (inside and outside).

I am considering a 4-post lift, and want to be sure the ramps and runways are wide enough for a GT40.

Measurements on mine, 47 inches inside and 70 inches outside.

Those measurements will work. That's with the 10.5 inch wheel and 295 tire. Unless you go wider in the rear.
